At that time, there was no hotel school, so we basically had to train them. So I developed a course that they had to follow. We took people that had no kitchen experience or no hotel experience. When the first person completed this course, and I think he took him four months when he graduated, the first thing I did was to give him a set of knives, which was gonna be his tools for his trade, which also motivated others. And 15 years later, when I was Vice President of Operations for the Middle East Africa, I walked back into the hotel and who do you think was the Executive Chef? My first student.
